Lately I've been on a health train. Not because it's "bikini season" or because I'm "watching my figure," but because it makes me feel good. I feel happier, healthier and just overall better.
I've been super obsessed with salads, black bean/corn mixtures, acai berry smoothie drinks instead of caffeine and vegetarian "meat" products lately, but I just have to share this super easy, super delicious recipe that I made this evening.
It's a great alternative to pizza- think of it as a carb-free, healthy bagel bite.
Bella Bites
What You Need:
- 1 box of baby portabella mushrooms
- 1 bag shredded mozzarella cheese
- pasta/pizza sauce (I used Ragu basil and tomato)
What You Do:
1. Gently pop the stems out of the center of your mushrooms. You should be left with what looks like a tiny mushroom bowl.
2. Fill the inside "bowl" with a little bit of pasta sauce so that it reaches the cap of your mushroom.
3. Sprinkle desired amount of cheese on top.
4. Place on a baking tray, sprayed with cooking spray.
5. Bake mushrooms at 425 degrees for about 10-12 minutes.
6. Take out and enjoy!
